Wine making In an apparatus, the atmospheric pressure is reduced (to approx. 15 mbar) and with this also the boiling point of the alcohol is lowered from approx. 78 °C to approx. 25-30 °C. With this procedure, the delicate aromas of the wine are almost preserved.
