Description

Sauvignon Animale Celeste is a still white wine with a Typical Geographical Indication (IGT Marche). The wine, produced from Sauvignon Blanc grapes, is grown at 350 meters above sea level in medium-textured, calcareous soils. The Sauvignon vines are trained using an inverted espalier system. The Sauvignon Animale Celeste from the Santa Barbara winery, produced in the Ancote area, is a structured wine that has won several awards. This grape variety, among the most widespread in France (its land of origin), has adapted perfectly to the Marche region, giving the palate highly prized wines that contribute to the valorization of the wine production of the Marche region and the Ancona area in particular. Sauvignon Blanc wine from the Marche region is a wine product made from pure Sauvignon Blanc grapes. After the grapes are harvested strictly by hand, they are subjected to a soft pressing. The winemaking process takes place in stainless steel tanks, and the must is then left to ferment slowly at a controlled temperature. The resulting wine perfectly expresses the typical citrus touch that characterizes Sauvignon Blanc. The result is a very fine wine, with great depth and good balance. A successful white wine, highly appreciated by critics and consumers both nationally and internationally.

The name Santa Barbara pays homage to our land, our tradition and those we worship. The history of this place dates back to the 6th century when Senigallia was a Byzantine city and a Lombardic (and therefore "barbarian") outpost was
set up in a nearby village. Since then, that village took the name of Barbara which is where our winery is located today, having the privilege of being housed in an old monastery.

Our winery is located 25 km from the Adriatic Sea and is located on the hills that run between the Misa and Nevola rivers. Here a team of professionals works in the winery and vineyards every day, fuelled by passion, determination and a pinch of creativity so that our grapes maintain their beauty and express the quality of our land.
