Description

Production of rosé wines in Bolgheri goes back to ancient times. Starting with Cassiopea, rosé production at Poggio al Tesoro is now extended with Pagus Cerbaia, a small but precious parcel of land with sedimentary soils. Here, the special selection of red grapes, such as Syrah and Cabernet Sauvignon, are partly fermented in amphorae and partly in oak casks.

Pairings

Pagus Cerbaia thrives on a triple passion: in the case of meat, it is exalted by chicken with peppers, rabbit "alla cacciatora", and meat ragout with homemade tagliatelle. For fish dishes, the harmony is with sea bass cooked in salt with a crown of Mediterranean vegetables and St. Peter's on a bed of black olives; in the case of cheese, excellent with fresh goat cheese with fig mustard. Finally, it is also recommended with tuna with sesame.
