Champagne Signature Blanc de Blancs Brut is a wine of great elegance produced using the Traditional Method. Made exclusively from Chardonnay grapes, it appears in the glass with a straw yellow colour and a fine, persistent perlage. On the nose, it is intense and airy, with notes of yellow fruit and citrus enriched by hints of butter and bread crust. The palate reveals a balanced, rich and enveloping structure, characterised by a natural freshness enhanced by the choice of zero dosage. The lively and generous finish makes it perfect to pair with fish dishes, shellfish and seafood, preferably served at a temperature of 6-8 °C.
Where it comes from
This wine originates from the vineyards of Philippe Gonet, located in the heart of the renowned Champagne region. Its sensory profile precisely reflects the terroir of the Côte des Blancs and Montgueux. The vines grow on calcareous-clay soils, characterised by deep layers of chalk that give the wine a distinctive minerality. The estate, whose history began in 1783, is now led by the oenologist Pierre Gonet. Production and slow maturation take place in Le Mesnil-sur-Oger, a Grand Cru classified area that helps define the aromatic identity and finesse of this label.
How it is produced
Vinification begins with a gentle pressing of the grapes to extract the must with extreme delicacy. The first ageing period lasts six months and takes place in stainless steel tanks at a controlled temperature or in epoxy resin vats, a choice aimed at preserving purity and aromatic precision. The prise de mousse is carried out according to the Champenoise Method, with a period in the cellar at a constant temperature. Thanks to a remarkable ageing potential, this meticulous process delivers a structured and seductive sip, capable of evolving over time while maintaining the distinctive characteristics of Chardonnay.
