Philippe Gonet's Champagne Blanc de Blancs Extra Brut is a pure expression of Chardonnay, produced according to the Traditional Method. It displays a straw yellow hue, enlivened by a fine and lively perlage and a creamy mousse. On the nose, the bouquet combines toasted notes with elegant floral hints of iris and linden. On the palate, it reveals a soft texture, with flavours of candied apricot and ripe peach, perfectly balanced by fresh accents of grapefruit and lime. The Extra Brut dosage ensures a dry and persistent sip and great formal clarity.
Where it comes from
The grapes come from the renowned crus of Le Mesnil-sur-Oger and Montgueux, in Champagne. Philippe Gonet enhances these vineyards grown on clay-limestone soils, characterised by a deep chalk formation dating back to the Tertiary period. This geological matrix is essential for imparting a distinct fresh and mineral structure to the wine. The approach of the winery, located in the heart of the Côte des Blancs, allows for a rigorous and authentic expression of the terroir of origin, ensuring a technical and linear interpretation of the territory.
How it is produced
Vinification begins with a gentle pressing to extract only the most delicate musts. Fermentation and the initial maturation take place over six months in temperature-controlled steel or epoxy resin tanks. Subsequently, the wine matures in bottle in the cellars of Le Mesnil-sur-Oger for at least three years, following the strict principles of the Méthode Champenoise. The result is a profile of rare precision, excellent when served chilled to accompany cheeses, refined first courses and fish dishes.
