Description
Grapes are selected from the highest and sunniest spots, destalked and left with their skins in big open-topped vats for the alcoholic fermentation, wild yeasts only and no refrigeration. After a light pressure wines are racked to big Slavonian oak casks and left with the fine lees at less two years.

From this winery
- Start up year: 1998
Founded in 1998 by the Greek Evangelos Paraschos, winemaker from 1979, and his family, collaborate together in producing natural wines, following the old traditional wine-making methods of the Collio and Vipava region. We have always been careful in the vinegrowing respecting the environment and the same vines. From 2003 also in the winery we don't use any kind of chemical treatment.
