Using oak barrels, they experienced a revolutionary aging process that gave birth to an intense and velvety rum that the government, convinced that this process improved its quality, modified the legislation regulating its production. A new benchmark was established and Venezuelan rum took on its new identity. Venezuelan production of rum is a tradition that dates back to the colonial era, but the innovative aging process introduced by Pampero marked a turning point: Pampero, in fact, was the first producer in the country to officially obtain the name of añejo ( aged) for its own distillate, setting a new benchmark for the quality of Venezuelan rum.
Unlike many distilleries, Pampero ™ continues to use three different distillation processes to obtain a spicy and aromatic rum among the most pure and appreciated in the world. Each process starts with a common distillation and then proceeds with a second and a third distillation that will determine the alcoholic strength and rum flavor intensity. Depending on the type of alambic you will obtain a column or continuous distillation, that of batch and that in pot still or discontinuous. Read more
