Still white wine from Arbois AOC, 14% ABV, produced by Michel Gahier. 100% Chardonnay. 0.75 L bottle, 2019 vintage. A wine that reflects the passion and dedication of Michel Gahier, a winemaker who meticulously tends his vineyards. Aged in untopped barriques, where a layer of yeast forms that protects the wine from oxidation. Fruity and mineral aromas. Bright golden yellow. On the palate, it develops with good balance: a rounded and powerful wine, with good acidity and minerality, ending on a persistent and harmonious finish.

| Aging | The barrel in which it matures is not topped up as with the other two white cuvées. Instead, as the wine evaporates through the pores of the barrel, a thin veil (voile) of yeast forms on the surface of the wine, protecting the wine from excessive oxidation. The oxygen penetrating the veil causes it to develop an exciting spiciness that is incredibly captivating. |
