| Wine making | We only use healthy grapes without Botrytis. For the Roter Veltliner we only use the crushing method without skin contact. Pressing is done immediately after the grapes arrive in the cellar using a pneumatic press. The juice then settles for about 12 hours, only the clear juice is used for fermentation, which is done by our selection of yeasts in temperature-controlled stainless steel tanks. |
