Koval Bourbon Whiskey Single Barrel is an unfiltered single cask bourbon. Its distinctiveness lies primarily in the blend's composition, which features 51% corn alongside barley malt and millet (instead of rye), a grain rarely used in the mash. Its true trademarks, however, are its kosher certification and the exclusive use of organic products. The Koval distillery was founded in 2008 by the Birnecker brothers and was the first in Chicago since the end of Prohibition. The company philosophy requires that every stage of production be rigorously managed within the distillery, including bottling and packaging. When we talk about the "Koval style," we are referring to high-quality organic spirits and artisanal production. The grains used to produce Koval Bourbon Single Barrel are grown according to the strict standards of organic farming. Each subsequent production step is clearly traceable, in accordance with the transparency guidelines that are the foundation of the Koval philosophy. The spirit of Koval Bourbon comes exclusively from the heart of the distillation and from small-batch Single Barrel bottling. Maturation takes place in new, toasted American oak barrels from Minnesota. The renowned Whisky Magazine included Koval in its list of the 100 best distilleries in the world, and Koval Bourbon Single Barrel in particular has won prestigious awards on both sides of the Atlantic.

Founded in 2008 by Robert and Sonat Birnacker (who decide to set aside their academic careers to retrieve the traditional distillation method of Robert's grandfather, Robert), the distillery produces an excellent selection of traditional American whiskey as well as a wide range of liqueurs, fruits and spirits.
All Koval's production line is biologically certified and kosher, and all the materials used are of local origin (including cereals and wood for casing construction). All stages of the production process of whiskey: mashing, fermentation, distillation, ripening and bottling are carried out at the distillery and are constantly monitored by a team of experts.
Aging takes place in 30 gallon barrels (113.55 liters) that depending on the distillate that will mature, are medium to strong roasting; in this way the distillate can develop both the characteristic aromas of the starting cereal and the sweet ones of the wood. Read more
