Story | The recipe has been researched and created by founder Ettore Pacilli, who has created a unique, exclusive, but above all authentic gin; one that offers a sensory experience that unmistakably brings one back to Apulia. The choice of ingredients used is precise, aimed at high quality standards, strictly of organic origin. |
Production technique | The alcohol base consists of organic wheat distillate in which the herbs are left to infuse at around 60 degrees. The botanicals, i.e. juniper, coriander seeds, liquorice roots and olive leaves, are infused in the base distillate and follow a further distillation process that preserves the aromas and fragrances. After about 48 hours, the third and final distillation is carried out with extra virgin olive oil. The distillate is left to rest, filtered and bottled. The gin is produced in small batches and bottled by hand. Each bottle is unique and the wait is forgiven at the first taste. |
