Description

Gaja, Ca' Marcanda and Pieve Santa Restituta grappas are produced at the Distilleria Cooperativa del Barbaresco founded in 1980. They are produced by distilling fresh pomace: the distillation period starts around mid-September and ends in November.

The Gaja family settled in Piedmont in the mid-seventeenth century. Four generations have succeeded in producing wine since Giovanni Gaja in 1859, founded the winery in Barbaresco in the Langhe. Angelo, son of John, is the second generation. He married Clotilde Rey, who is credited traditionally credited with having imposed in the current company's production philosophy, oriented towards high-quality wine. The exponent of the third generation Giovanni Gaja was the son of Clotilde and Angelo Gaja, who died in 2002. Angelo Gaja, the current owner, joined the company in 1961 and made his own choices that were already his father and grandfather. He worked to spread the knowledge of state and Barbaresco in foreign markets.

Production technique Grappa obtained from the distillation of marc from the vineyard of the same name. Distillation process: the distillation of the marc, dripping with wine, takes place in a state-of-the-art plant in order to preserve all the varietal aromas and fragrances intact. The still used is discontinuous, made of steel, and inside it the marc is passed through a jet of steam, which carries the alcohol vapours with it. These, subsequently drawn into the distillation column, produce a distillate that originally has an alcohol content of 70 - 75 °C, which, before bottling, is diluted with distilled water to bring the alcohol content to that indicated on the label.
