Elena Walch Alto Adige Pinot Grigio is a still white wine with a fresh and elegant profile, faithfully expressing the character of Pinot Grigio. On the nose, it offers a defined bouquet featuring aromas of ripe pear, accompanied by clear hints of white pepper and subtle notes of sage. On the palate, it reveals a full-bodied structure and well-balanced savouriness, finishing with a persistence that makes it ideal both as an aperitif and paired with first courses, grilled fish, and delicate cheese fondues.

Where does it come from

The grapes are grown in Alto Adige, cultivated on steep slopes that reach altitudes between 250 and 900 metres above sea level. The vines benefit from south-east and south-west exposures, combining the cool influences of high-altitude plots with the milder climate of classic hillside sites. This synergy, together with the presence of limestone soils enriched with clay, sand, and porphyry components, ensures optimal grape development and imparts a distinct mineral character to the palate.

How is it produced

The production process begins with careful manual harvesting, essential for picking the bunches while maintaining their integrity. In the winery, the grapes undergo gentle pressing followed by static clarification of the must. Fermentation takes place in stainless steel tanks at controlled temperatures. Finally, the wine matures for several months in contact with its own lees, a crucial step to enhance its volume and prolong its flavour persistence.

Wine making Le uve vengono pressate delicatamente e il mosto viene sottoposto a chiarifica statica. La fermentazione avviene in serbatoi di acciaio inox a temperatura controllata di 20 °C. Il vino affina poi per alcuni mesi sui propri lieviti in contenitori di acciaio inox.
