Description
The new millennium began with the creation of a new 'Supercuvée', the result of careful selection of the best grapes at harvest, the crowning glory of Elena Walch's range of wines. Thus, the year 2000 saw the production of South Tyrol's first white 'Supercuvée', which has won several awards and is nowadays included in the restricted 'circle' of the best Italian white wines: a selection of the highest quality grapes spread over several grape varieties, together with fermentation and maturation purely and exclusively in wood. The different levels of maturity of the grape varieties used in the blend and the special care given during all stages of vinification are strongly reflected in the preponderant and dominant character of the Cuvée. Indeed, the wine is said to express the best of each vintage from Elena Walch's vineyards 'beyond the clouds', year after year.

Encouraging quality and innovation, Elena Walch stood at the head of the Alto Adige quality revolution and has gained local and international esteem for her efforts. An architect by trade, Elena Walch married into one of the oldest and most significant wine families of the region and brought new, modern concepts to the traditional establishment. | Wine making | Chardonnay dominates this blend. The harvest date of the different grapes from our two 'single vineyards', the percentage of which may vary slightly from year to year, is determined by the optimal ripeness of the Chardonnay. Being a blend, the harvest and processing of all the grapes takes place together and on the same day. |
| Aging | After fermentation, a weekly 'batonnage' is carried out for 3 months. The wine matures in French barriques for about 10 months, followed by further ageing in the bottle for at least 6 months. |
