| Story | Located in the north of Burgundy, near Auxerre, the Chablis vineyards are situated along a small river, aptly named Serein ("Serene"). The Climat 'Beauroy' is located north-west of the village of Chablis, near the village of Poinchy. |
| Soil composition | The Chablis region is a limestone plateau cut by valleys. The Premier Crus are on a stratum dating back to the Kimmeridgian (155 million years B.C.) with an alternation of marl and limestone and small oyster deposits in the rock, reminiscent of the warm, shallow sea that covered Burgundy at the time. |
| Wine making | Traditional vinification. The grapes are crushed on arrival at the winery using pneumatic presses. Fermentation takes place in stainless steel tanks thermoregulated at 16 °C. |
