After a further 36 months of bottle ageing, the wine goes on sale, i.e. four years after the harvest.

Description

Still red wine from Alto Adige DOC, 14.5% ABV, produced by Dipoli Peter. Blend: 70% Merlot, 30% Cabernet Sauvignon, a blend that best expresses the terroir of this region. 0.75-liter bottle, 2018 vintage. Iugum, which means "yoke" in Latin, is a wine that tells the story of a family and a terroir. The grapes are vinified separately and, after destemming, ferment in open wooden vats for approximately ten days. Both varieties undergo malolactic fermentation in barriques, after which the Cabernet Sauvignon ages for 12 months in new barriques, while the Merlot ages in second- and third-use barriques. Twelve months after harvest, the wines are blended. After eight months of aging in cement, the wine is bottled. After a further 36 months of aging in bottle, the wine is released for sale, four years after harvest. On the nose, it offers aromas of ripe berries, enriched with spicy hints of juniper and hints of aromatic herbs. It has a deep and intense ruby red color. The palate is warm, with energetic tannins, full-bodied, and fruity. It has a long finish and a pleasantly almondy finish.

Peter Dipoli estate was born in 1987 when the Dipoli family bought 1,2 hectares of vineyard in Penon, a hamlet near the village of Cortaccia in Alto Adige. The vineyard was completely replanted with Sauvignon Blanc and in 1990, the first 1637 bottles of Voglar were produced.

In the following years, the estate was enlarged by buying some new vineyard and renting others. This is how the vineyard Iugum in the nearby village of Magré, became part of the property. In the beginning the grapes were vinified at a friend’s winery. A fundamental step was to buy an ancient, rural house in Villa, in the village of Egna, that in 1998 was restored and became the estate winery.

Story "Iugum" is a Latin word meaning yoke, the implement used to keep oxen coupled while working in the countryside, but it is also a term that appears in some ancient viticultural texts referring to a type of vine support.

Harvest Merlot is harvested in mid-September, and Cabernet Sauvignon in the first ten days of October.
Wine making The grapes are vinified separately and after destemming (leaving the berries intact if possible) ferment in open 40 hl wooden vats for about ten days. Two punching-downs are carried out daily during this period.
