The name comes from the Les Terres Fines parcel, a single vineyard characterised by old vines that give the sip a precise varietal expression. In this area, the soil composition favours a natural and profound minerality. Dhondt Grellet manages these plots following organic and sustainable farming practices, working in full harmony with the environment.
How it is produced
Production follows the Traditional Method, with secondary fermentation in the bottle and careful ageing on the lees. The process involves a skilful blend of base wines and a perpetual reserve wine, a technique that enriches the bouquet while ensuring consistent quality and structural complexity. At disgorgement, the winery chooses to maintain a minimal dosage, defining the Extra Brut style.
