| Wine making | Blank in pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fractions. After clarification of the must, selected yeasts are inoculated for fermentation in temperature-controlled stainless steel tanks. This is followed by racking and lowering the temperature to around 10°C to avoid malolactic fermentation. We continue with regular battonage until the Cuvée is assembled and, in March, after adding the "draught syrup", it is bottled, corked with the crown cork and laid down in the stack for frothing. |
| Aging | The stacked bottles remain a minimum of 36 in contact with the yeasts before 'remouage'. Then disgorged and dosed only with the same wine. Draught: spring following the harvest. |
