What kind of wine it is
The Alta Langa Luigi Coppo Pas Dosé by Coppo is a refined Piedmontese sparkling wine made using the Traditional Method, created from a blend of Pinot Noir and Chardonnay. In the glass, it stands out for its fine and persistent perlage and a bouquet reminiscent of bread crust, yeast, and fresh apple. On the palate, it is dry, linear, and fresh, with lively acidity that accompanies a savoury finish, making it ideal as an aperitif or with fried fish dishes.
Where it comes from
This cuvée originates in Piedmont, in the Alta Langa area, from vineyards situated between 270 and 450 metres above sea level. The vines, trained using the Guyot system, sink their roots into deep soils composed of clay marl and sedimentary gypsum rocks. This geological matrix gives the wine its characteristic savoury imprint, an expression of a terroir enhanced by the historic Coppo cellars in Canelli, now recognised as a UNESCO World Heritage Site.
How it is produced
The manual selection carried out in August ensures the perfect integrity of the bunches. After gentle pressing, the must ferments in stainless steel tanks at a controlled temperature, completing malolactic fermentation. The prise de mousse takes place according to the strict principles of the Traditional Method, with thirty months of ageing on the lees. The absence of final sugar dosage defines the Pas Dosé style, offering a sip of absolute purity.

Coppo’s history is one of tradition and bold vision for the future, of sacrifice and innovation. It is a story of the unconditional love that Coppo has for their vines’ origins, for varieties that have always been cultivated in Piedmont, and for old family traditions.
The origins of the winery date back to 1892. For over 120 years, the family has remained the sole owner. Since the beginning, the Coppo family has managed estate vineyards and bottled their wine under the name of Coppo, making it one of the oldest family-run wineries in all of Italy.
In fact, in 2012, the Chamber of Commerce added the winery to the national register of historical businesses, highlighting its uninterrupted activity for over a century in the sector. Read more
