Description
First produced in 1996 it is a blend of mainly Grenache (40 year vines on average) with some Carignan planted in 1972 and Syrah planted in 1983. This wine takes its name from the two vineyards which give the grapes. It's the wine which is perhaps the most “terroir” of our different Cotes du Rhones. A lot of its personality is due to the Carignan which bestows a definite tannic structure which is softened by the opulence and soft spices of the Grenache.

Séraphin Sabon, a native of the the neighbouring village of Serignan du Comtat married Marie, daughter of Romain Jausset, landowner at Châteauneuf-du-Pape.
In 1932 they created the « Clos Mont Olivet » Since then the domaine has passed through the hands of Joseph, eldest son of Séraphin and then his children. Today it is Celine, David & Thierry Sabon the grandchildren of Joseph who manage the estate. Read more

Wine making | A partial destemming takes place and the vats are gravity filled. The wine is made avoiding maximal extraction, on the contrary the sought after qualities are elegance and freshness. The free run juice and the press juice are raised seperately, mainly in concrete tanks where they undergo their malolactic fermentation. |
Aging | After the final blend is made the wine continues to mature in large oak barrels and vats. |
