Description

What kind of wine is it

Clandestin Champagne Austral Brut Nature is an expression of great precision that showcases Pinot Noir in its purest form, presenting a bright straw yellow colour enlivened by a fine perlage. Crafted strictly according to the Traditional Method, this Blanc de Noirs in a pas dosé style displays a clear aromatic profile, characterised by fragrant red fruits and hints of bread crust. The absence of added sugars ensures a dry, profound and extremely clean tasting experience.

Where does it come from

Champagne is one of the most renowned wine regions in France, capable of imparting a unique identity to this label by Clandestin Champagne. The characteristics of the local soils are directly reflected in the pronounced minerality that defines the palate, emphasising a deep connection with its place of origin. This Blanc de Noirs was created to interpret the region’s vocation for excellence, offering a glass with strong territorial adherence and a structured profile.

How is it produced

The production of this cuvée is based on the principles of the Traditional Method, involving a prolonged ageing on the lees which enriches its structure and the complexity of its bouquet. The choice to operate at zero dosage allows the gustatory tension to remain intact, favouring an elegant and decisive drink. Tasting reveals a long persistence, making this dry sparkling wine particularly suitable for harmoniously accompanying raw seafood, shellfish dishes or seafood starters.

From this winery
Champagne Clandestin is a new joint project between Bertrand Gautherot of Vouette & Sorbée and his righthand man, the young, energetic, Burgundian-trained Benoit Doussot. Needless to say both Bertrand and Benoit have a lot of experience with the terroirs around their village, so much so that their neighbors in Buxières-sur-Acre have been turning to them for assistance in setting their vineyards to rights after years of neglect.

Clandestin means hidden or secret and it refers to the source of this Champagne: the long-overlooked, west-facing parcels of Pinot Noir on Kimmeridgian soils as well as Chardonnay on Portlandian soils above Buxières.
