Description

What kind of wine it is

Cavallotto Langhe Freisa is a still organic red wine that embodies the authentic character of Piedmont, made exclusively from Freisa grapes. On the palate, it reveals a well-defined and complex structure, with a remarkable capacity to evolve over time. Its aromatic profile is marked by an intense bouquet of red fruits, with notes of cherry and strawberry, harmonised by delicate floral and spicy nuances. Thanks to its elegant texture, it is the ideal accompaniment for traditional cured meats, flavourful meat dishes and mature cheeses.

Where it comes from

This Piedmontese red originates in the heart of the Langhe, within a specific plot of the renowned Bricco Boschis cru. The focus on this single vineyard by the Cavallotto winery allows for a profound territorial identity, faithfully reflecting the unique characteristics of the soil and local microclimate. The care dedicated to this small parcel of land ensures the production of a wine of marked complexity, intimately linked to Piedmontese winemaking roots and capable of expressing the most authentic essence of its place of origin in the glass.

How it is produced

The vinification of Cavallotto Langhe Freisa is based on spontaneous fermentation with indigenous yeasts, followed by a semi-submerged cap maceration lasting about five or six days. Afterwards, the wine matures slowly in traditional Slavonian oak barrels for a period of between twelve and fifteen months. This essential stage shapes the structure of the red, which is then completed by a further six months of ageing before release. These techniques result in a harmonious and balanced sip, characterised by excellent ageing potential.

History and Curiosities

Originating from the Bricco Boschis cru, the Langhe DOC Freisa by Cavallotto is an authentic expression of the Piedmontese territory. Made exclusively from Freisa grapes, this organic red wine ferments spontaneously thanks to the action of indigenous yeasts. The vinification process involves semi-submerged cap maceration and ageing for 12-15 months in Slavonian oak barrels and six months in the bottle. The 2024 vintage promises a magnificent evolution for up to eight years, developing over time a complex structure and an elegant interplay of fruity and spicy aromas.

At the gates of Castiglione Falletto, in the heart of the Barolo Zone, on the slopes of the Bricco Boschis, one finds the Cavallotto Winery, which lies on 25 hectares of land. Since 1928, the Cavallotto family has owned the estate Tenuta Bricco Boschis. In 1946, they were the first cultivators in Castiglione Falletto to vinify all of their estate’s fruit. In 1948 they released the first bottling of their own BAROLO wine, with the label and registered trademark of Cavallotto.

Today the children of Olivio – Laura, Giuseppe and Alfio, the 4th generation working the family farm – continue to exclusively vinify the grapes produced in their estate vineyards into DOC and DOCG wines: Barolo, Dolcetto d’Alba, Barbera d’Alba, Langhe Nebbiolo, Langhe Freisa, Langhe "Grign" made from Grignolino grapes, Langhe Chardonnay and "Pinner" made from Pinot Nero grapes.
