Description

The Coltassala wine has an intense ruby red colour. The nose is elegant and intense, with notes of vanilla, cocoa and fruit in alcohol. It is a wine of great structure destined for long ageing.

Today, as in the 11th century, the village is intimately involved in the production of wine and olive oil. The fermentation room and wine cellars, the vinsantaia and bottling, and the mill orciaia modern- although very modern, are still housed in the basements, in the halls, desecrated churches and in buildings of the village, joined together by an amazing "vinodotto" underground 'wine pipeline'. Volpaia, is thus not a mere "theatre for tourists", but the center of a complex rural activity which are directly or indirectly linked to all the inhabitants of the village. Read more

Harvest The grapes were all harvested by hand and collected in 15-20 kg boxes.
Wine making The grapes are destemmed and softly crushed. Fermentation took place using indigenous yeasts. The crushed grapes were fermented in stainless steel tanks at a controlled temperature of between 27 °C and 30°C. During the first fermentation phase, which lasted 14 days, two rounds of punching-down per day were carried out to have a greater extraction of 'noble' substances from the grapes. After maceration on the skins for a further 10 days, malolactic fermentation was carried out.
