Rhum Rhum Blanc PMG 56° is an undiluted white agricultural rum crafted by Capovilla in Marie-Galante, Guadeloupe, through double distillation in copper pot stills. Produced entirely from pure sugarcane juice, this spirit presents an aromatic and complex profile. The nose reveals delicate notes of fresh cane, citrus, honey, and ginger, seamlessly integrated with subtle nuances of tobacco and leather. At 56% ABV, it delivers a powerful expression of its primary ingredients, ensuring a robust character without compromising on its crystalline purity.

Origin

Originating from the island of Marie-Galante in the French Caribbean archipelago of Guadeloupe, this spirit represents a profound connection to its roots. The PMG designation, meaning Fully Marie-Galante, guarantees an entirely local production process focused on authentic regional expression. Born from a collaboration between Luca Gargano and Capovilla, the rum utilises freshly pressed juice from Rouge and Bielle sugarcane varieties. This meticulous selection ensures a vegetal clarity that highlights its natural intensity. The resulting distillate is broad and airy on the nose, yet remains distinctly firm and persistent on the palate, reflecting the true essence of its Caribbean terroir.

Production

The production relies on a slow fermentation process lasting seven to nine days in temperature-controlled stainless steel vats. This is followed by precise double distillation in small copper pot stills using a bain-marie method, designed specifically to capture the raw material’s authentic character. The liquid then rests in stainless steel tanks for at least a year before bottling to preserve its clarity and vibrant freshness.

Lively, herbal and peppery attack with a subtle sugarcane sweetness; dense, almost oily, rich and generous mouthfeel. Fruity with almond notes and kirsch-like cherry, developing into spices (star anise, clove, cinnamon), then citrus (grapefruit, bergamot), white flowers, vanilla and frangipane. Long, oily, persistent finish with candied and jammy fruit (cherry, strawberry), floral and mineral nuances and spice.

Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundation for a completely different culture.

At that time in our country all had the ambition to distill "something" in the house without having the compenses to do so.
