Description
Grappa di Traminer from the Capovilla company is a distillate with excellent organoleptic characteristics. Research and experience have contributed to achieving high levels of quality in the field of distillation. Owner Vittorio Capovilla began his experience as a distiller back in 1974, when he was working on machinery for the winemaking industry. Through his constant travels abroad, he noticed how advanced the world of distillation had become in the rest of Europe. So he wanted to make a change in his life and dedicated himself to the search for quality raw materials to ensure his distillates were unique. His enterprise continues today, placing him at the pinnacle of quality distillation. Grappa di Traminer is a perfect example. Its bright white color and aromas recall those of the original grape. The distillation system used aims to preserve all the characteristics of the original grape variety. The pomace comes from the draining of the must of this aromatic white wine. Traminer is a native Trentino grape variety and is distinguished by its strong aromas and sweetish tendencies. Traminer Grappa manages to convey these aromas during tasting. The distillation is carried out using the bain-marie system, which allows for the maximum preservation of the grape's properties. The boiler in which the freshly drained pomace is placed is equipped with a cavity through which steam circulates. The slow reaching of high temperatures allows for the preservation of the pomace. The mass will heat slowly, allowing the heads to evaporate first and then allowing the heart to be extracted, leaving the tails. This care will yield a final product that is refined and pleasing to the palate.

Numerous trips abroad, particularly Switzerland,
Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundation for a completely different culture.
At that time in our country all had the ambition to distill "something" in the house without having the compenses to do so.
The passion for the world of distillates was born by accident in '74, the year I started to deal with machinery for oenology.
