Produced on one of the wildest islands of the Hebrides, the Caol Ila 12 Year Old Whisky is a high-quality peaty Single Malt characterized by strong salty notes due to its high iodine content. In Gaelic, Caol Ila is pronounced "cuul-eela" and is the name of the strait that divides the island of Islay from that of Jura, unspoiled lands in western Scotland. Islay is the undisputed queen of Single Malt and is home to several distilleries. The Caol Ila distillery is located in a picturesque inlet into which flows a stream that collects spring water from the limestone rocks of Loch nam Ban. Founded in 1846 and passed through several owners, the distillery is today run by the Stitchell family, who still use malted barley in nearby Port Ellen. The Single Malt 12 y.o. was only released in 2002, while previously the spirit was used in famous blends such as Johnny Walker. Compared to other bottles from the Caol Ila distillery, the classic 12 year old is easier to drink and is also more readily available. A smoky but not overly so Scotch whisky, the Caol Ila 12 year old aged in oak casks has a measured peaty charge and a less spicy structure than the other spirits produced on the island of Islay, Lagavullin and Laphroaig above all. The malted barley is the same as that used to produce Lagavullin, but the slender pace of the Caol Ila stills and the prolonged fermentation cause the loss of the distinctly phenolic note and give rise to a delicate peaty.

The distillery, located on the Sound Coast, was founded by Hector Henderson in 1846. Over time it has changed properties several times: it was acquired in 1854 by Norman Buchanan, in 1863 by Bulloch Lade & Compagny and in 1920 by a group of men which formed the "Coal Ila Distillery Company Ltd". In 1930 the property went to Scottish Malt Distilleries. Today, distillery belongs to the Diageo multinational group. Read more
