Extra Brut Classic Method sparkling wine from Trentino-Alto Adige, produced by Cantina Toblino. 2021 vintage, 0.75L bottle, 12.5% ABV. A Trento DOC that expresses the elegance and sophistication of the terroir, with a fine and persistent perlage. The bouquet is remarkably complex and refined, with hints of ripe citron, orange zest, and crisp Rennet apple blending with fragrant hints of bread crust, almonds, and light spicy notes. The color is an intense straw yellow with golden highlights. The flavor is a perfect balance of fruity, spicy, and almond notes. An innate freshness and elegance that concludes with a long, lingering finish.

| Aging | After vinification and ageing of the sparkling wine base until the spring following the harvest, the wine is drawn off in the bottle. This starts the second fermentation in the bottle, initiating a long period of maturation in contact with the yeasts that lasts for an average of 36 months. Slight movements of the bottle allow the yeasts to better interact with the other components of the wine, giving it unique characteristics. Finally, disgorgement and a slight dosage are carried out to maintain its absolute freshness and elegance. |
