Product name Metodo Classico Solera Extra Brut
Perfume The nose has an intense impact of orange blossom and dried aromatic herbs, followed by notes of slightly oxidised renetta apple, candied orange and citrus zest. The finish reveals smoky notes of burnt straw on chalky minerality.
Taste On the palate, this wine is explosive in its nuances of balance between freshness and savouriness: it moves between aromatic herbs, cedar and bergamot zest and spices. A slight astringent sensation is given by the presence of beautiful tannins in the aftertaste, with a push of more pronounced oxidative and wild notes. A very gastronomic sparkling wine with a tense and persistent finish.
Production method At the second fermentation, I did not want to filter or clarify the wines; even the liqueur was not filtered, so as to keep the sensation of my perpetual cuvée intact. Therefore, expect a colour that veers towards amber tones and a sip supported by an engaging acidity.

Description

Like my other Blanc de Noirs sparkling wines, Solera is made from a cuvée of wines from different vintages with the important addition of a reserve obtained using the Cuvée Perpetua method, also known as Solera. I wanted to produce a sparkling wine like certain Champagnes that I like, from Vignerons who produce “chewy” bubbles, rich, complex and capable of accompanying a full meal and provoking a beautiful emotion even if they remain in the glass and warm up. The old reserve wines impart very strong, spicy, citrusy and vinous aromas at the same time.

"On a cold winter evening in 1997, I sat in front of a crackling fireplace, drinking—savoring every sip —an old Champagne blanc de noirs. In that solitary moment of simple joy, inspiration struck, and my life’s passion was born. But, more than a passion— a challenge. Could my hands craft such elegance? Could I bring to life a wine that stirred the senses, captivated the mind, and captured the heart? T hat evening, in the warmth of my home in the Vicenza hills, I dedicated my life to creating a cellar that answers these questions – crafting wines that expressed my personality and the terroir of my home, honoring the most noble of all grapes, Pinot Noir. My hope then, as it is today, was that my wines would not only find a place in the collections of true Pinot Noir enthusiasts—but that they might make a home in their hearts."
