What kind of wine it is
Testamatta Rosso, produced by Bibi Graetz, is a red wine with typical geographical indication that represents an authentic expression of Tuscany and the Sangiovese grape variety. The brilliant ruby colour introduces a bouquet where blackcurrant and plum stand out, enriched by delicate nuances of tobacco, vanilla and spices. Where it comes from
The Sangiovese grapes come from the Florentine hills and the areas of Vincigliata, Olmo, Lamole, Londa, Montefili and Siena. The old vines, trained in bush and Guyot systems, sink their roots into soil rich in galestro, clay and stones, which imparts acidic tension and a perfect balance between fruit and structure. The high-altitude vineyards, constantly ventilated, encourage slow and gradual ripening. This microclimate preserves the natural liveliness of the grapes, offering a deep and genuine territorial expression.
How it is produced
The process begins with a double manual selection to ensure only the best berries are used. After gentle pressing, the individual plots ferment separately with indigenous yeasts in open barrels, steel vats and truncated conical tanks. During vinification, daily manual punch-downs are carried out. Malolactic fermentation takes place in wood, followed by maturation in French oak barrels. Each batch is aged individually before the creation of the final blend, which is then further rested to achieve maximum harmony.
