Description

Desiderio was a bull which lived on Avignonesi’s Capezzine farm more than 100 years ago. The largest bull in Tuscany then, this majestic animal helped define the Chianina cattle race, specific to the Fiorentina steak. It came as a natural choice to dedicate this Merlot to the beloved bull as a testimony to the wine’s origin. This is a Merlot from Tuscany at its best.

When in 1377 Gregory XI moved the papal seat from Avignon to Rome, some French families followed him to Italy, one of them, probably for simplicity, began to be called "Avignonesi".

Avignonesi consists of four wine-producing estates: Le Capezzine, I Poggetti, La Selva and La Lombarda. In total they comprise 225 hectares of open ground, 109 ha of vineyards and 3 ha of olive groves.

Soil composition Fluvial, clayey sediment of Pleistocene origin at Cortona. Moderately deep, clayey, silty sediment of Pliocene origin at Montepulciano.
Harvest The Merlot was picked between the 8th and the 14th of September, the Cabernet Sauvignon was picked on the 8th of October.
Wine making 4 weeks of temperature-controlled fermentation and maceration on the skins in stainless steel vats using indigenous yeasts. Malolactic fermentation is carried out in wood.
Aging 20 months in 225-litres oak barrels, 15% are new.
