Aging The new wine is kept on the noble lees for some weeks. Then the foam removal lasts 20-25 days at 18°C. After that, the sparkling wine is kept on the lees for a few weeks. Then the tartaric acid is stabilised and the sparkling wine is bottled. Final ageing in bottle.

Description

The Fashion Victim Brut is produced in the most highly vocational wine-growing areas of Friuli Venezia Giulia, in the cellars of Astoria, which with its brand and its brand is known internationally for its excellent Proseccos at competitive prices. Founded in 1987 by a family of winemakers, it has made technological innovation and structure its hallmarks. In its evolution, Astoria has sought to differentiate itself from other wineries by creating highly sophisticated labels and bottles. Multifaceted and particular lines pair well with the products, offering a sensorial analysis that starts from the sight and culminates in harmony with the smell and taste.

Produced from a blend of Trevigiane grapes, this cuvée produced by the Val de Brun estate is one of the most harmonious products of the winery. The grapes are harvested by hand in September during the first and coldest hours of the night, to allow the grapes to maintain their freshness and aroma. Once they arrive at the cellar, the grapes are softly pressed and the skins undergo cold maceration. Before primary fermentation, the must is decanted to clarify and transferred into steel containers at a controlled temperature of 18/19°C with selected yeasts. The resulting new wine is left on the fine lees for a few weeks to retain greater aroma and prepare it for the secondary fermentation. The sparkling process in an autoclave lasts approximately 20/25 days at 18°C and is then returned to rest on the fine lees for a few weeks. Before bottling and being put on sale, the Fashion Victim Brut is cold stabilized, obtaining a wine with a strong aroma and a full, harmonious flavor.
