Aging For his Brunello, Argiano selects grapes from his noblest vineyards and ages the wine in two different types of wood: the first year in French barriques and tonneaux of various sizes to strengthen the wine's innate structure, the second year in larger Slavonian oak barrels that allow the wine to balance. After ageing in wood, the wine is transferred to concrete tanks. The combination of concentrated, ripe grapes fermenting at carefully controlled temperatures, together with careful ageing in a selection of different oak barrels, produces red wines that retain the incredible ageing potential for which Brunello di Montalcino is famous.

Harvest Sangiovese grapes are usually harvested between late September and mid-October, depending on soil type, vineyard exposure and weather conditions.
Wine making The must is fermented in contact with the skins in temperature-controlled stainless steel vats for two to three weeks. The fermentation time varies from one vat to another, depending on the vineyards from which the grapes come. Once alcoholic fermentation is complete, malolactic fermentation begins spontaneously, a natural process that transforms malic acid into lactic acid and makes the wine soft. This second fermentation can last from a few weeks to a few months, depending on various factors such as cellar temperature.
