The "natural fermentation in the bottle" and the traditional "classic method" is from 1920 and the only ancestral production techniques with which Francis Bellei of Bomporto produces its renowned Lambrusco di Sorbara. In the early 80s the stimulus to produce a sparkling wine of high quality led to a search of land suitable for the production of Pinot Noir and Chardonnay. This raises the Monte San Lorenzo Behind the hills of Riccò Serramazzoni, where soil and microclimate provide a suitable natural ecosystem vineyard planted to French clones of Pinot Noir and Chardonnay.
