What type of wine it is

Etna Bianco DOC by Tornatore is a Sicilian white wine that expresses the character of the Carricante grape variety. Aged in steel and concrete tanks, it offers aromas of green apple, white peach, and citrus fruits with subtle hints of mint. On the palate, it stands out for its vibrant volcanic minerality and distinct freshness, offering a taut sip that concludes with a saline finish. This fresh and mineral wine is the ideal pairing for seafood, shellfish, poultry, and medium-aged cheeses.

Where it comes from

The grapes are grown in Castiglione di Sicilia, on the northern slope of Mount Etna. The vines are trained using the vertical trellis system on natural terraces, set in deep volcanic soils rich in minerals that give the wine its typical savoury character. The Mediterranean climate is characterised by significant diurnal temperature variations, favoured by the proximity of the Nebrodi Mountains. These conditions ensure balanced ripening and limited yields, resulting in a defined and elegant flavour profile.

How it is produced

Production begins in October with a manual harvest. After destemming and soft pressing, the must undergoes cold settling. Temperature-controlled fermentation preserves the aromatic integrity of the Carricante grape. This is followed by ageing on fine lees for about three months, a fundamental phase for adding texture and volume to the palate. Ageing concludes in steel and concrete tanks, excluding the use of barrels to enhance the pure territorial freshness of the wine.

Founded in 1865 by Francesco Tornatore’s great-grandfather, the winery has carried on a winemaking tradition rooted in the fertile lands of Etna for more than 150 years.
