What type of wine it is

Monte Carbonare by Suavia is an organic white wine from Soave Classico in Veneto, made from Garganega grapes and matured in stainless steel. On the nose, it expresses aromas of broom and wildflowers, with light citrus hints that precede a distinct mineral and smoky finish. On the palate, it proves creamy and sharp, supported by a vivid savouriness and a dry, persistent finish, offering a sip of great balance and clarity.

Where it comes from

The roots of this white wine lie in Fittà, in the heart of Soave Classico, at an altitude of approximately 280 metres. The vineyards face north-east and north-west and are cultivated using the Pergola Veronese system on deep volcanic soils with a clay matrix. This terroir, characterised by black basalt similar to coal, gives the wine a marked mineral imprint. The vineyard work enhances vines with an average age of sixty years, tended with extreme dedication.

How it is produced

The manual harvest at the beginning of October precedes the fermentation in stainless steel at a controlled temperature for sixteen days, without malolactic fermentation. The wine then rests for twelve months in steel on the fine lees, enriching its gustatory texture. A single membrane filtration precedes six months of ageing in the bottle, a final phase useful for crystallising the aromatic precision and the clear tension of the sip.

The castle is the one in Soave: a heritage from the Middle Ages, when the town was still called by the old name of Suavia; Giovanni and Rosetta’s daughters, however, have been the main female characters in this story since the start of the twenty-first century.

Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico. The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.

Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started.
