Description
Still organic white wine, 13% ABV, 100% Carricante, produced by Planeta on Mount Etna, Sicily. Vintage 2024. A wine born in the heart of Etna's viticulture, with Carricante grapes grown at 690-720 meters above sea level on mineral-rich volcanic soils. The grapes are hand-harvested and vinified, with part fermented in barriques. Aged in stainless steel tanks and 500-liter Allier oak tonneaux. A beautiful nose of yellow peach, broom flowers, aromatic herbs, and wet rock. A very bright straw-yellow color. Its savory character is immediately striking, balanced by remarkable fruity aftertaste; it finishes long with hints of rosemary and salty mineral tones. Perfect with fish and fresh fruit carpaccio, seafood pasta dishes, and stretched-curd cheeses.

| Wine making | The grapes, harvested in crates, are immediately chilled to 8°C, selected by hand and sent to a light crushing and then soft pressing. The decanted must is racked and fermented at 15°C, in stainless steel and 15% of the must in tonneaux. The resulting wine remains on its fine lees until February with continuous agitation. |
