Domaine Pattes Loup Chablis Premier Cru Beauregard is a full-bodied organic white wine. On the nose and palate, it reveals a deep and complex profile, defined by notes of dried apricot, almond, chamomile, mint and spices, enriched by delicate honeyed nuances. The sip is structured and harmonious, supported by a refined and persistent finish. Served at a temperature of 12–14 °C, this Chablis pairs perfectly with fish dishes, poultry and mature cheeses, enhancing the aromatic purity that characterises Chardonnay.

Where it comes from

The grapes come from the Beauregard vineyards, located in the heart of Chablis Premier Cru, in Burgundy. In this specific area of Bois d’Yver, the characteristics of the soil fully enhance the Chardonnay, ensuring pronounced aromatic definition and precise flavour. Domaine Pattes Loup manages eight hectares of vineyards following organic farming principles to respect the natural balance of the ecosystem. The local microclimate makes Chablis a terroir of choice, capable of producing wines with a strong identity and impeccable balance.

How it is produced

Production follows the philosophy of Thomas Pico, who since 2004 has steered Domaine Pattes Loup towards sustainable viticulture, achieving organic certification in 2009. Every stage, from vineyard care to cellar management, is designed to enhance the natural complexity of Chardonnay, resulting in a rich and multifaceted wine. The artisanal approach preserves the integrity of the fruit and raw material, ensuring an ageing potential of 5–10 years.

History and Curiosities

In 2004, Thomas Pico returned to Domaine Pattes Loup in Burgundy, converting the estate to organic viticulture. This respect for nature, certified by ECOCERT in 2009, is fully expressed in the Chablis Premier Cru Beauregard 2021. Produced in the Bois d’Yver area from pure Chardonnay grapes, this still white wine embodies true artisanal dedication. Its production enhances the prestigious Chablis terroir, translating the historic French heritage into a refined glass, capable of offering a captivating harmony and memorable depth.

From this winery
Now 30 years old, I spent my entire childhood in a small village in the Chablis region, Courgis. Surrounded by a father and a grandfather who were winegrowers, I quickly inherited a passion for the profession. I therefore naturally chose to study for a BTS in viticulture and oenology in Beaune.

My passion for the profession of winegrower, my curiosity and my desire to respect the environment and the health of my family and friends were determining factors in my decision. The organic cultivation of my vines became an obvious choice.

In 2004, I returned to the family estate of Bois d'Yver and took over 8 hectares which I converted to organic farming (ECOCERT). I then created my own estate, the "Pattes Loup" estate.
