Where it comes from
This white originates from the Burgundy region, in Saint-Aubin, from the Premier Cru Les Perrières vineyards. The vines benefit from a favourable south-east exposure, essential for optimal and consistent ripening of the grapes. The clay-limestone soil plays a fundamental role, imparting a distinct mineral tension to the palate that balances with the softness of the fruit. Patrick Miolane's family-run estate manages nine hectares of vineyards, dedicatedly enhancing the natural characteristics and climate of the area.
How it is produced
The process begins with a manual harvest, followed by a rigorous double selection on a vibrating table to choose only perfectly healthy and ripe bunches. Vinification continues with a slow fermentation, carried out exclusively with indigenous yeasts to respect the expressiveness of the raw material. The wine then matures for twelve months in oak barrels, a crucial stage to enrich its structure and integrate the toasted aromas while preserving the fruity freshness. This meticulous approach results in a wine capable of evolving and refining in the cellar for a period of five to ten years.

Operations are run by Patrick, a larger-than-life character who loves a good joke, and his dynamic, forward-looking daughter, Barbara. They make a perfect pair, each responsible for their own sphere of activity: Dad looks after the vineyard; Barbara is in charge of the wine-making and marketing.
The estate produces fourteen Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet appellations, including premier cru, villages and regional wines. The whites very much reflect the local growing conditions (the terroir), in particular the mineral quality of the soil. Where reds are concerned, the estate boasts a number of pinot noir wines which are aged for a long time and allowed to mature slowly. They are rich in red-berry-fruit flavours, with finely structured tannins.
