The Valiano Chianti Classico from Fattoria di Valiano is an organic red wine from Tuscany with a harmonious profile, vinified in steel and aged in barrels. This blend of Sangiovese and Merlot presents a deep ruby colour and enveloping aromas. On the nose, it offers intense aromas of violet and forest fruits, interwoven with delicate hints of vanilla and cinnamon. The palate is full, warm and balanced, supported by a velvety tannic texture and a soft, persistent finish that makes it ideal for charcuterie boards, game dishes and pappardelle with wild boar ragù.
Origin
This wine originates from the Valiano vineyards located in Castelnovo Berardenga, near Siena. The vines grow between 200 and 300 metres above sea level, with a north-east exposure that favours steady ripening. The limestone soils, rich in rock fragments, boast excellent natural drainage, which encourages the ideal development of the root system. This particular geology enhances fruit concentration, ensuring the solid structure typical of an authentic Chianti Classico, capable of faithfully reflecting its territory of origin.
How it is produced
The production process begins in mid-October with a careful manual harvest, followed by de-stemming and gentle pressing of the grapes. The must ferments in temperature-controlled steel tanks. Maceration on the skins for about fifteen days, accompanied by frequent pumping over, optimises the extraction of colour and polyphenols, enriching the aromatic profile. The process concludes with nine months of barrel ageing, a crucial step that smoothes the tannins and stabilises the structure, offering impeccable balance and great gustatory clarity.
