What kind of wine it is

Champagne Les 5 Vignes Blanc de Blancs Brut Nature by Tristan Hyest brings out the best characteristics of Chardonnay. With its bright straw-yellow hue, it reveals an extremely fine and persistent perlage. On the nose, it offers delicate floral notes and white-fleshed fruit, enriched by hints of custard, honey and yeast. On the palate, it is harmonious and dry, supported by a pronounced tension that leads to an exceptionally long finish. It is ideal for accompanying seafood dishes, white meats and soft cheeses, showing its best when served between 6 and 8°C.

Where it comes from

This wine originates from the Champagne region, in the heart of the Trélou-sur-Marne area. The cuvée is the result of agriculture focused on sustainability and organic practices, a philosophy chosen by Tristan Hyest to preserve the integrity of the soil. The Chardonnay grown in these vineyards imparts a marked aromatic clarity and precision. The very limited production makes this label a sought-after expression of the region. This rigorous approach ensures an intact fruit, capable of guaranteeing remarkable ageing potential over the years.

How it is produced

Vinification strictly follows the principles of the Traditional Method. The wine matures for ten years on the lees, an extremely prolonged period that allows the development of complex, evolved aromas and a well-defined structure. As a Brut Nature, no sugar dosage is added, thus preserving the purest and most linear essence of the cuvée. This production process ensures an elegant and profound sip, able to enhance the natural liveliness of the grapes in a consistently balanced and satisfying tasting experience.

The values that have been passed me are thanks to my father, who decided to learn the work of the vine and wine, I received all these in addition to my champagne heritage.

From his experience in different vineyards, he had an indispensable expertise and understanding of the desire to preserve this heritage, which prompted me to graduate from the School of Viticulture.
