Description

The Chardonnay is produced by Tormaresca, in the company that bears the name and represents Antinori in southern Italy. Founded in 1998, it is made up of two estates: Bocca di Lupo, located in the Murgia Barese and Masseria Maime, located in the beating heart of Puglia, Salento. Antinori's goal is precisely to enhance the Apulian terroir, which, despite having long been among the main producers of wine grapes on the peninsula, has never been able to fully express its identity. By cultivating only native vines in harmony and cohesion with the territory, in recent years the company has been contributing to the region's wine renaissance.

Produced on the Masseria Maime estate, surrounded by woods and pine forests, the Tormaresca Chardonnay is the result of the company's attention to detail, enthusiasm, and passion. It is produced with the best grapes selected and harvested by hand from the vine of the same name. Once brought to the cellar, they are softly pressed without damaging the berries. Before being fermented, the must is cooled and kept for a day at a temperature of 10°C. The result is a natural clarification that makes the mass ready for the alcoholic fermentation that takes place in stainless steel tanks at a controlled temperature of 16°C. Before being sold, the Tormaresca Chardonnay undergoes a refinement in steel which continues until bottling and subsequent sale. This results in a wine with great freshness and fragrance that is not Typical for a southern Italian white wine, the characteristic aroma of exotic fruits and the flavor it releases are distinctive traits of the cultivation on the Maime estate.

Wine making The Chardonnay grapes were harvested and transferred to the cellar. After a gentle crushing, the must was cooled and kept at a temperature of 10 °C, for about 24 hours, so as to obtain a natural clarification Alcoholic fermentation took place in stainless steel tanks thermo-conditioned at a temperature of 16 °C in order to enhance the aromatic component of the grapes.
Aging Tormaresca Chardonnay continued ageing in steel until bottling.
