Salento IGT still red wine, 14.5% ABV, produced by Tenute Rubino. 100% Primitivo. 0.75 l bottle, 2021 vintage. A Primitivo that tells the story of a Apulian family and their love for their land. Fermentation between 22-24°C in steel tanks. Maceration: 15 days, at a controlled temperature. Malolactic fermentation carried out entirely. Aged for 5 months in steel, 4 months in 40 hl French oak truncated cone-shaped vats, 4-6 months in bottle. Ethereal, fragrant, and rich notes distinguish this ample and enveloping wine, which unfolds clear aromas and nuances of cherries in alcohol, blackberry jam, blueberry and currant, rhubarb, humus, tobacco, ginger, black pepper, and aromatic herbs. Dark ruby, tending toward garnet. A decisive, coherent and dynamic taste impact, from which emerges a fascinating minerality, which blends well with the powerful structure of the fruit, the vigorous acidity and the already pleasant and exuberant tannins.

After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
