Where it comes from
The grapes are grown in the Murge area, cultivated in spur-pruned cordon vineyards located at four hundred metres above sea level. The exposure of the rows and the nature of the calcareous-clay soils create an ideal environment for the ripening of the bunches. Harvesting takes place in the last ten days of September, enhancing a Puglian territory renowned for its balance between freshness and intensity.
How it is produced
The process begins with alcoholic fermentation in French oak barrels, followed by a six-month period during which part of the batch undergoes maturation in wood. This technical approach gives the wine a solid body, characterised by a notable dry extract and well-balanced acidity. To fully appreciate its essence, it is recommended to decant for an hour before serving at 18-20 °C, making it ideal paired with flavourful first courses and mature cheeses.
