Production method The process consists of dealcolation, which reduces the alcohol content in the wine to a legal value that distinguishes a non-alcoholic beverage from an alcoholic one. Through this process our beverages are ALCOHOL ZERO the process of alcohol elimination does not involve the use of chemicals but of water. The process is carried out by a membrane dealcolator, a new technology machine consisting of a control panel made of membranes and prefilters and circuits for wine and water inlet/outlet. What happens: wine and water flow in the same direction through separate circuits, then meet a membrane, which keeps them separated through the natural process of direct osmosis, where alcohol is transferred from the wine to the water.

The name Santa Barbara pays homage to our land, our tradition and those we worship. The history of this place dates back to the 6th century when Senigallia was a Byzantine city and a Lombardic (and therefore "barbarian") outpost was
set up in a nearby village. Since then, that village took the name of Barbara which is where our winery is located today, having the privilege of being housed in an old monastery.

Our winery is located 25 km from the Adriatic Sea and is located on the hills that run between the Misa and Nevola rivers. Here a team of professionals works in the winery and vineyards every day, fuelled by passion, determination and a pinch of creativity so that our grapes maintain their beauty and express the quality of our land.
