Description
What kind of wine it is
Poggio Maru Primitivo Salento by Terre Cevico is a still red wine with Indicazione Geografica Tipica from Apulia. Made from Primitivo grapes, it stands out for its full-bodied and elegant profile, with fermentation and ageing in stainless steel. On the palate, it reveals notes of black cherries, dried plums, spices and white pepper, supported by soft yet firm tannins. This structured style leads to a long and persistent finish.
Where it comes from
The grapes are grown in the heart of Salento, one of the most renowned areas of southern Apulia. The vineyards, located in the province of Taranto, boast vines aged between fifteen and twenty-five years. The Guyot training system allows for perfect vegetative balance. The choice to focus on low-yield vineyards ensures exceptional colour and aromatic concentration, while manual harvesting guarantees the grapes reach optimal ripeness.
How it is produced
The production of Poggio Maru Primitivo Salento begins with a rigorous selection of the grapes. After destemming, the berries are not crushed, leaving the skins intact to encourage optimal colour extraction. Fermentation takes place in stainless steel tanks at a controlled temperature for about eight to ten days. The constant use of techniques such as pumping over and délestage allows for gentle extraction of aromas and structure. Finally, the wine matures in stainless steel to preserve the freshness and integrity of the original fruit.
