Still organic red, Sangiovese Superiore, 13% ABV, produced by Pandolfa. 2024 vintage. A Sangiovese that tells the story of an estate steeped in history, whose beginnings are lost in tales of knights, intrigue, and battles. The Sangiovese grapes are fermented in stainless steel at a controlled temperature. The wine remains on the skins for an average of 14 days, followed by malolactic fermentation. Aged for a minimum of 6 months in stainless steel tanks and 2 months in bottle. On a herbaceous periwinkle, it develops fruity aromas of morello cherry and citrusy notes of blood orange; the latter soften into a ferrous sensation accompanied by a gentle note of violet and a pungent touch of pepper. Fresh and savory on the palate, balancing a distinctly caloric sensation; the finish has notes of licorice.
