How it is produced

Production begins in autumn with the selection of bunches destined for traditional drying, which continues in crates until February to concentrate aromas and sugars. After destemming and gentle pressing, the must macerates on the skins and ferments in steel. The wine then matures in large Slavonian oak barrels, completing its journey with a long period of rest. To fully appreciate its complex structure, decanting is recommended; it is an ideal companion for mature cheeses, game and flavourful red meat dishes.
