Description
The Maremma Toscana Vivia is produced on the Le Mortelle estate, owned by Antinori in the heart of Maremma, a few kilometers from Castiglione della Pescaia. The Antinori family acquired it in 1999 from the belief that the area, still emerging, was highly suited to the production of high-quality wines. The cellar, partially buried on the top of the hill overlooking the estate, was built with an eye to environmental impact. Built only with natural materials, it uses the thermoregulation of the rocks in the soil, and the wine production process is It was designed for "falling", with the harvest carried to the upper floors after the harvest, for vinification and aging, which takes place in barriques on the lower floors.
The Maremma Toscana Vivia by Le Mortelle is born from the union of the two typical grape varieties of the Tuscan coastal area, Vermentino and Ansonica, with Viognier, implemented in the estate's production after years of experimentation. The vines, grown in a medium-textured, mainly sandy and silty soil, are harvested from the beginning of September, starting with the Viognier, concluding in the first days of October with the Ansonica. Once they arrive in the cellar, the grapes are softly pressed and vinified separately to enhance the peculiarities of the grapes. of the single grape. The must is brought to a temperature of 10°C for about 24 hours to obtain a natural clarification and transferred to stainless steel tanks for alcoholic fermentation at 16°C. The Vivia ages for a short period in steel in contact with its leaves for 3 months before being bottled in January of the following year. This wine is very pleasant and fragrant with a fresh and citrusy taste.
