Description
Offida Pecorino Io Sono Gaia (Non Sono Lucrezia) 2022 by Le Caniette, an organic still white wine from the Marche region, 100% Pecorino. A wine that celebrates biodiversity and sustainability, produced by a family-run winery that has always been committed to promoting native grape varieties. Selection and harvesting in bins with storage in cold storage for 5 to 10 days at 0°C, destemming, very gentle pressing in the absence of oxygen, yield of approximately 50% with static cleaning of the must, inoculation of selected yeasts. Fermentation at a controlled temperature of approximately 15°C for approximately 30 days. Aged for 12 months in barriques: 1/3 new, 1/3 second passage, 1/3 third passage. Bottling the year following the harvest. Fruity with notes of tropical fruit and spices. Deep straw yellow. Intense, mineral, and persistent.
