What kind of wine it is

Champagne Symposium Extra Brut by Laval Aurore and Florian is a Blanc de Noirs with a bright straw-yellow colour and golden highlights. The result of a careful blend of Pinot Noir and Pinot Meunier, it is crafted using the Traditional Method. On the nose, ripe citrus fruits, green apple and white flowers intertwine, complemented by pastry notes and a distinct mineral imprint. On the palate, it is taut and layered, perfectly balanced between freshness and structure, with a fine and creamy perlage that gives rhythm to the sip, culminating in a long and savoury finish with vibrant energy.

Where it comes from

This wine originates in Boursault, in the heart of Champagne. The producer, Laval Aurore and Florian, manages the vineyards following a strict organic and sustainable approach, respecting natural cycles to enhance the essence of the terroir. This agricultural philosophy results in a pronounced mineral component, giving the glass a defined geographical identity and a clean flavour profile. Thanks to meticulous agronomic management, the wine boasts a solid ageing potential, ensuring optimal evolution in the cellar for a period ranging from five to ten years.

How it is produced

Aged on the lees according to the Traditional Method, it develops a very fine and persistent effervescence. The Extra Brut dosage preserves its dry profile, enhancing the natural salinity and freshness of the sip.
